Our Weekend Family Fun


We live about 45 minutes away from the Charlotte Motor Speedway, which is quite a big deal in this area. We are not big Nascar fans but know and appreciate enough about it. The speedway offers tours and we took advantage of it on Saturday. The weather was just beautiful...


The tour takes you to behind-the-scenes areas that you cannot access during a race, such as pit road, the garage area and a chance to take your picture in Victory Circle.


The highlight of the tour was definitely the lap around the track at about 90mph in a 15-passenger van! Pretty amazing to see what it feels like in those turns.

At the end of the tour we spent some time in the stands watching people take part in the Richard Petty Driving Experience (now my husband thinks that's what he wants for his birthday!).
It was a fun, inexpensive way to spend a Saturday afternoon with the family discovering something new (for us) in the city we call home.

Update: Tropicana BOGO Coupon at Harris Teeter

Yesterday I posted info about signing up for Tropicana Juicy Rewards and how you could print a BOGO coupon. I also mentioned that this week Harris Teeter has this juice on sale for $1.79, which is a great price.

Today I asked about this coupon at the customer service desk before I began my triples shopping and the Assistant Customer Service Manager confirmed what I alluded to in yesterday's post. Harris Teeter will not accept any Internet Printed coupons for free items.

We gladly accept internet manufacturer’s coupons for product; however no “free” product internet coupons are accepted.

You may find that this is a case of YMMV (your mileage may vary), which I have found before and is why I decided to ask this morning. So, if you find you can use it at your store, that's great. However, it is stated in the coupon policy so don't count on using it at HT.

Neat Idea ~ Resurrection Cookies

I usually share some favorite blog posts on Friday but I found this one this morning as I was looking through the links this week from Jen's Tasty Tuesday (I didn't participate this week thanks to the yucky sickness in the house...but I'll be back to it next week).

Anyway, I found a link to Kara's post about Resurrection Cookies and was intrigued. I had never seen this idea before and thought it was neat.

The coupon expires 4/7/10.

Produce Co-Op Payment & Pick Up Info

Reminder for those local to me...

Payment for the Indian Trail Produce Co-Op pickup is due no later than this coming Sunday night (3/28). Go here to make your payment with Your Neighborhood Produce.

Pick up for the Indian Trail location will be Thursday, April 1st from 12noon - 1pm at Sardis Baptist Church.

Harris Teeter Triples ~ My List

Harris Teeter will be offering Triple Coupons beginning tomorrow, 3/24, and ending 3/30.

As a reminder, Harris Teeter will triple coupons with a face value of up to $0.99...that means your $0.75 coupon will triple to $2.25 off of an item. Harris Teeter will triple up to 20 coupons per day.

We are very fortunate to live in an area where the grocery stores are really competing hard to earn our business. Great Wolf Lodge Waterpark $5 To Break Record


I found the following info in an email from Charlotte On The Cheap...



Try out Great Wolf Lodge waterpark for just $5! Help them break world waterslide-athon record

Normally the Great Wolf Lodge water park is open only to those staying in the hotel. But from 9pm on Friday, March 26th to 9am, March 27th, the public is invited. Great Wolf Lodge is trying to break the world record for the longest distance traveled - 843 miles - on waterslides over a 24-hour period. The Concord location is participating and that means you can too. The 24 hour period includes 12 hours where non-hotel-guests can participate.

For just $5, which will be donated to the Big Brothers/Big Sisters of Mecklenburg County, you can slide all night down the River Canyon Run water slide. Each slide will be counted and added to the total. The wave pool will be open as well, but the other water slides will not be open. There will also be food, prizes, and a DJ. No need to register; just show up at 9pm and start sliding.

Triples Are Coming!! Triples Are Coming!!


Yep, that's right. It appears that Triples have been confirmed for Harris Teeter beginning next Wednesday, March 24th!!!!!!!!!!

For anyone new to couponing this means that Harris Teeter will TRIPLE the value of coupons with face values of up to $0.99...meaning a $0.75 coupon will triple to $1.50 off a product.

So, start working on organizing those coupons!!! Stay tuned for more info on the best deals to get during triples.

And you know, I could have predicted this was going to happen...I haven't cut or filed my coupons in almost a month! I am the one who REALLY needs to get organized. Guess I know what I'll be doing this weekend.

Produce Co-Op & Today's Pick Up

I first tasted this Honey Bun cake at a 4th of July cookout several years ago. I eagerly asked for the recipe and then filed it away and forgot all about it...until yesterday! I was excited to find it tucked away in my recipe box and knew I must give it a try.


Honey Bun Cake

1 yellow cake mix (with pudding included...I used Pillsbury)
8oz sour cream
4 eggs
2/3 cup oil
1/2 cup sugar

*Combine these 5 ingredients and beat for 2 minutes. Pour 1/2 of batter into a lightly greased and floured 9x13 pan.

1/2 cup brown sugar
2 tsp cinnamon

*Combine brown sugar and cinnamon. Sprinkle half of sugar mixture over batter. Top with remaining batter. Sprinkle remaining sugar mixture on top. Swirl with a knife.

*Bake at 350 for 35 minutes

4 tablespoons milk
1 cup powdered sugar

*Mix the milk and powdered sugar together for a glaze. Add glaze to the cake as soon as it is removed from the oven.

What a yummy after-school treat on this rainy day.


This cake is a definite hit at our house. So melt-in-your-mouth moist and cinnamony-good! I'll be making this again SOON!

Baby Steps Toward a New Bedroom

I have been wanting to fix up my bedroom for some time now but haven't known what I want to do, haven't wanted to spend much etc. At the beginning of this year I decided it was time...this is the year I will FINALLY take care of the master bedroom and bathroom in my home. Now, since I've made that decision...where do I start?!?

It is not unusual for me to see things or find pictures of things I like or that I would like to try to do. It is, however, unusual for me to actually DO these things! So...this is where the baby steps come in. Little by little I will get there on this project...

First, I need to paint the walls...still working on that baby step of selecting a color.

Next I want some new bedroom furnishings. I know that I don't want to walk into a furniture store and pick out a set and be all "matchy-matchy". I want something a little different and I want to be frugal about it.

I was excited to stumble across a blog post not long ago with a photo that has become the inspiration for my new bed. I just love what The Little Green Bean did with this door for a headboard! Surely I can do that too, right? (check out her site to see more pictures of it)
So I was off in search of a door since I wasn't lucky enough to just happen to have one in my garage. I found one at a local Habitat For Humanity thrift store for $15. It doesn't look like much now but after some paint and a little distressing I think it will be a great start to a new room for my hubby and me!
Well, now that I've bought this door I guess I really do have to move forward on this project! Stay tuned to see more as my baby steps continue...

Phil & Beth's Mac & Cheese

Six+ years ago when I was just home from the hospital after having my son, some friends brought us dinner that included this yummy mac & cheese. I knew I had to have the recipe and I've been enjoying it ever since! Hope you do too...

Phil & Beth's Mac & Cheese
2 cups pasta (I use either elbow macaroni or mini penne)
2 cups milk
2 tbls butter
2 cups shredded cheese (I usually use sharp cheddar but a mexican blend is SO yummy for this!)
2 tbls flour
(additional cheese to sprinkle on top before baking)

Cook and drain the noodles.

Heat the milk and butter together in the microwave for 2 minutes...this will warm the milk and soften the butter.

In a blender pour in the cheese, milk/butter combination, and flour. Blend to make the cheese sauce.
Pour sauce over noodles (Yes, it will look like soup!).

Add some additional cheese on top and bake at 350 for 20-30 minutes.
Enjoy the cheesy goodness!!!!

Produce Co-Op Pick Up Last Week

In my efforts to get things done last week, I neglected to take a picture of my produce basket from the produce co-op. So...let me just let you know that it was another good one that included the following (can't remember quantities now)...

lettuce
broccoli
asparagus
red peppers
potatoes
sweet potatoes
tomatoes
bananas
pears
red apples
kiwi
oranges

YUM!! I am really enjoying having the variety of fresh produce on hand...and at a savings over the grocery store prices.
