Pumpkin Muffins

I love most anything made with pumpkin!  This muffin recipe is from my childhood.  I'm not sure where my mom got it but it sure is a good one...so moist and full of yummy fall spices.  Hope you enjoy it!



Pumpkin Muffins

1 cup pumpkin  (NOT pumpkin pie filling)
1-1/2 cup sugar
1/2 cup vegetable oil  (I use canola oil)
2 eggs
2 tablespoons water
1/4 teaspoon ground cloves
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1-2/3 cup flour
1 teaspoon cinnamon
1 teaspoon nutmeg

Combine all ingredients and mix well.  Pour into muffin tins.
Bake at 350 for 20-25 minutes.

  1. Delicious! This reminds me that I have everything I need in the cabinets to make the version of pumpkin muffins i make.... need to bake now... lol!
