Banana Chocolate Chip Bread

Banana Chocolate Chip Bread

1-3/4 cups all purpose flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1 large egg, lightly beaten
1 cup mashed banana (2-3 overly ripe bananas will give you a cup)
1/2 cup milk
1/3 cup oil (I use canola oil)
1/2 cup chocolate chips

Combine first 4 ingredients in a large bowl.  Make a well in the center of the mixture for wet ingredients.

In a separate bowl combine egg, mashed banana, milk and oil.  Add the wet mixture to the dry ingredients.  Stir until just moistened.  Stir in the chocolate chips.

Pour batter into a greased loaf pan.  Bake at 350 for 1 hour.  Cool in the pan for 10 minutes.

*If making muffins follow the same instructions to mix ingredients.  Spoon batter into greased muffin pans (or use liners).  Fill about 3/4 full.  Bake at 400 for about 18-20 minutes.  Remove from pan immediately.

I linked this recipe to Miz Helen's Full Plate Thursday and Works For Me Wednesday.

  3. I love chocolate chip banana bread, but my family doesn't so it always ends up on my hips. I try not to make it too often.
