Here's a little reminder about the American Greetings coupon...$1 off a 3 card purchase...I used these coupons at Target the other day. They have a nice selection of everyday cards for $0.99 (they are Carlton Cards, which is also owned by American Greetings so this coupon is valid for these too). So I stocked up on some birthday cards, plus a few thank you's and sympathy cards.

Mealtime Monday ~ The BEST Buffalo Chicken Dip

Ok, so Buffalo Chicken Dip isn't a meal by itself (although I can sure make it one!). This is the BEST recipe I have found for this dip. I'll definitely be making this for Super Bowl Sunday!

Buffalo Chicken Dip

4 chicken breasts, grilled
2 (8oz) packages cream cheese
1 small bottle ranch or blue cheese dressing
1 bottle Texas Pete Wing Sauce **adjust to your taste ~ I use almost a half bottle since we don't like it super hot & spicy
1 (16oz) package shredded sharp cheddar cheese

Once chicken has been grilled, cut or shed into bite-size pieces and place in bowl. Pour wind sauce over chicken. Cover and refrigerate in marinade overnight.
Spread cream cheese in bottom of a 9x13 casserole dish. Spread chicken and wing sauce over cream cheese. Pour bottle of ranch or blue cheese dressing over the chicken. Sprinkle cheddar cheese over the top.
Bake at 350 for 45 minutes.
Serve with tortilla chips.

I usually cover mine with foil for the first 30 minutes and then bake uncovered for the last 15 minutes.

Mealtime Monday ~ Salmon with Pecan-Crunch Coating

from the archives...This is a good recipe.  I hope you enjoy it.  I am joining in this week's Ingredient Spotlight at Eat At Home.

Salmon with Pecan-Crunch Coating
4 salmon fillets (about 1-1/2 inches thick)
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons Dijon mustard
2 tablespoons butter, melted
1-1/2 tablespoons honey
1/4 cup breadcrumbs
1/4 cup finely chopped pecans
1 tablespoon chopped parsley

Sprinkle salmon with salt and pepper; place skin side down, in a lightly greased baking dish.
Combine mustard, butter, and honey; brush over salmon. Combine breadcrumbs, pecans and parsley; spoon evenly across top of salmon. Bake, uncovered, at 450 for 12 to 15 minutes or until fish flakes easily with fork.
Yield: 4 servings

Target Clearance

Target stores have some GREAT clearance deals right now in almost every department. Toys are at 50% right now and should go to 75% off either today or tomorrow from what I hear. Check your local store to be sure.

I hot a couple of Targets the other day and found some great clothing deals for my kids...sweaters for my 6 year old son for $3.24, short sleeve golf shirts for him for $1.98, all colors of cords for my 9 year old daughter for $3.24 and more! With prices like that I try to buy ahead for the next year as well.

Check out your Target and see what you find...I'll be back at mine again this week to see what else has been marked down!

Classico Pasta Sauce Printable Coupon

American Greetings Coupon - Follow Up

I wanted to let you know that I tried my American Greetings coupon at Harris Teeter today and it DID work!

I purchased 2 cards at 99 cents each and 1 card at $1.99. The card for $1.99 rang up at $1 since it is BOGO this week and rang up at half off. The 99 cent cards are not included in the BOGO offer.

I used the $1 off 3 cards coupon, which doubled to $2 off.

So, I got 3 nice Valentine's cards for $1 out of pocket!

Mealtime Monday ~ Italian Pot Roast

Italian Pot Roast
from Cooking Light 5 Ingredient 15 Minute cookbook

1 (2-1/2 pound) boneless beef round roast
1 medium onion
1/4 tsp salt
1/4 tsp pepper
2 (8oz) cans no-salt-added tomato sauce
1 (0.7oz) package Italian salad dressing mix

Slice roast in half for even cooking; place in a 3-1/2 quart slow cooker. Add onion and remaining ingredients. Cover and cook on high setting 5 hours or until roast is tender. Or, cover and cook on high 1 hour; reduce to low setting and cook 7 hours. Slice meat to serve.
Makes 8 servings.
Serve with a salad topped with a light dressing and warm dinner rolls.
