Mealtime Monday ~ Triple Chocolate Bundt Cake

In thinking about Valentine's Day later this week I began thinking about chocolate. And that lead me to think of this super chocolatey cake! It is so easy...starts with a boxed cake mix...and is so good. It's been a long time since I've made one of these...I might need to change that!

Triple Chocolate Bundt Cake

1 (18.25 ounce) package devil's food cake mix with pudding
1 (5.9 ounce) package chocolate instant pudding mix
1-1/4 cups water
1/2 cup vegetable oil
4 large eggs
3 cups (18 ounces) semisweet chocolate morsels, divided
1/2 cup whipping cream

*Combine first 5 ingredients in a large mixing bowl; beat at medium speed with an electric mixer for 2 minutes. Stir in 2 cups of chocolate morsels. Pour batter into a greased and floured 12-cup Bundt pan.
*Bake at 350 for 50 to 55 minutes or until cake springs back when touched. (toothpick may not come out clean if trying to test that way) Let cool in pan on a wire rack for 10 minutes. Remove from pan and let cool completely or a wire rack.
*Combine remaining 1 cup chocolate morsels and whipping cream in a heavy saucepan. Cook over medium heat, stirring constantly, until morsels melt. Let stand 15 minutes. Drizzle chocolate glaze over the cake. Garnish, if desired, with something such as whipped cream and chocolate morsels or shavings or nuts.
*Let cake stand 1 hour before serving.
